UBE BRAZO DE MERCEDES

 Ingredients

For the Ube Custard Filling:

10 egg yolks, beaten [200 g]

7 oz (1/2 of a can) condensed milk [200 g]

1 cup whole milk [240 mL]

1 tbsp ube extract [15 mL]

1 cup ube halaya [240 mL]

4 tbsp softened unsalted butter [57 g]

2 to 3 drops purple food coloring


For the Meringue:

10 egg whites [300 g]

1 teaspoon cream of tartar [3.4 g]

3/4 cup granulated sugar [150 g]


powdered sugar for lightly dusting (to prevent sticking)
